I have recently installed archlinux (with KDE Plasma) using the archinstall script and then setup the nvidia driver with these instructions
I am currently using one external monitor connected to my laptop through an adapter HDMI to USB-C and another monitor (same model) connected through HDMI directly.
The USB-C port is working properly, but the one connected to the HDMI is not even recognized by the laptop. I can exchange the monitors on this setup and the result is the same.

Which is a great summary of the cause of your problems, though not this one, the nvidia driver loads.
But xrandr and your xorg config and log* are borderline pointless, you're running some wayland compositor.
*Did you seriously upload a pdf print of your xorg log?

Well, thank you for the advice on archinstall, I had got that one before, but I wanted a taste of arch before going head on into it.
Is there a way I can debug a wayland compositor to know where is my HDMI driver loading?

I think I need to study the Wayland architecture a bit more. I have no idea where to start looking.

As predicted, "nvidia-drm.modeset=1" isn't actually set but KMS is a prerequisite for nvidia + wayland.
Editing /etc/default/grub does nothing, you still have to run grub-mkconfig to actually write /boot/grub/grub.cfg
Asnother consequence is that the card isn't properly exposed to the drm subsystem and you're not getting an edid from there.
Offline
You are an angel! I have followed all the steps within the nvidia installation process and for some reason the sudo grub-mkconfig -o /boot/grub/grub.cfg wasn't applied.
Now my second monitor is working, although it doesn't seem to be running on 60hz as the other one.
I will mark this as resolved and open another issue if necessary. Is good to know I don't have to reinstall everything from scratch yet. Thank you Seth!
