So, I removed psmouse.synaptics_intertouch=0 from my kernel command line and everything works as it should again. None of these packages seem keyboard/mouse related so not entirely sure why I had this issue. I had added this kernel argument a long time ago due to my trackpad not always working (sometimes it did and sometimes it didn't which is weird itself).
Everything seems to be working fine now without it, was just wondering which package could do this. Also, curious if anyone else ran across this issue.

Otherwise, did yo maybe randomly reboot after that update, maybe applying a previous kernel update?

Maybe? Not sure why it would be apparmor as I do not leave it running/use a startup service or kernel option for it (I occasionally use it as a wrapper for another program that is not related to system startup). Could be though I guess. I checked the logs and didn't see anything unusual either. The whole thing is strange. No kernel update. I reboot regularly, so these were the only updated packages (so I did reboot, but it was not random). Guess it's a mystery. I haven't tried reusing the psmouse kernel line to see if it is still broken, so I suppose I could try that and see if I can somehow generate logs after rebooting. Seems like a hassle though since everything works fine now.

apparor is pretty much the only thing I could see in that list having any impact - there's no positive reason to call it out (hence the question about a reboot loading a new kernel - way more plausible explanation) *shrug*
