The Battle for Wesnoth is surely one of the best games for me, Tremulous is quite nice as well. Nethack is fantastic. Also Frozen Bubble is nicely done.

I am not sure if OpenTTD really counts as an open-source game since it isn't possible to play it without some non-free game data.

For me, it is FreeCol. FreeCol is an open source clone of the 1994 Colonization game from Microprose. It is a turn based strategy game that is being very actively developed. If you download the tar.gz file you don't need to compile anything, just un-tar it, read the readme and play.

others all have this 'homebrew' feeling, but neverball stands out, it really feels like a commercial quality game.
