Debian: Depending of what version, it is very stable to run as a server. you also have the comming Ubuntu server LTS. They have good hardwaresupport.
Dunno how good apt-get is to remove metapackages, it had some problems in the past.

FreeBSD is nice too.
Well, my favourite is Solaris/OpenSolaris.

Debian - install once, use all the time.
Using with testing repo (so no out of date apps) for 2 years now, and everything just works.

Define "better". For a server platform, it could be considered "better" since it has more emphasis on security. FreeBSD focuses on being a usable and stable, OpenBSD places first through fifth priority on security.
Well, some people are recommending OpenBSD over FreeBSD, so it's deemed to be better for whatever they're using it for.
I was aware of the security awesomeness of OpenBSD, but what else is there that puts it above FreeBSD?

Not many mentions of it here, but CentOS. Been considering Arch because of how much I like it as a desktop distro but not sure on how suitable it is...

I'm using debian (etch), it's very stable, package management is simple with aptitude, there are security updates.. what do you want more?
