I am about to install arch.
The current one looks a bit old, correct? (2007.08-2)
If so should I go with 2008.04-rc or do a FTP Install?

I think it's safe to go with 2008.04-rc. After all, after first upgrade you'll have most current version of all packages. That's the „pro" of rolling release system . You can also use ftp install if you've got decent internet connection. I've done recently a couple of ftp installs—no problems at all.
Are you going to install system on one box or maybe you're planning to deploy it on more of them? If it's a broader adoption I can propose you with some strategy if you're interrested (I don't want to mention details here needlessly)
