Need help choosing an email server

My ISP does not provide e-mail addresses so I thought I would try and set up my own e-mail server.  I've never done this before so I was hoping someone could recommend a 'HOWTO' that explains things for the absolute n00b.  I've read a bit about IMAP vs POP3 and I'm pretty sure I prefer IMAP.  The server will only have to handle 2-3 'accounts'/users and the simpler to configure, the better.  I've thought about Postfix but was wondering if there's anything simpler out there.

Also, if there's a basic beginner's guide to how e-mail actually works (so that I can understand what I'm doing), I would greatly appreciate knowing it.

All suggestions are appreciated.

I would actually suggest gmail. But if you want to run you're own, shoot for postfix, it's way easier to setup then the rest. Email is complex

Ya I'd suggest this too, way more reliable. IMAP/POP3 support and if you have your own domain you can get google's mail servers to handle that I believe for free. http://www.google.com/a/help/intl/en/index.html
