What should I use for Video Editing?

I just got my Hauppauge PVR card working, and I just saved a very long (2 VHS tapes) video to my hard drive. I need to remove previews before the film, black space from when I was switching tapes, and black space after the film. Does anyone have any recommendations for video editing software that could do this?
The end result I'm hoping to get is a decent quality DVD that won't degrade like the VHS tapes are. Is there a way I could make a custom menu setup?

Hi,

there's avidemux and cinerella. I have used only avidemux in the past for some basic video cutting, I think cinerella is a more advanced tool in this regard. I am not sure about the DVD menu creation though, I think this should be possible with cinerella (I could be wrong though).

Avidemux is great for encoding and converting video. For DV video editing, if you want to add transactions and stuff you can use something like kino.
