This could be a stupid question, but does anyone know how to set the server address for ncmpcpp so it can connect to a remote host?

mpd_host within the configuration file? (I don't use ncmpcpp [but ncmpc], took a quick look through the ncmpcpp source instead)

use the MPD_HOST  environment variable . you can add it to .bashrc ( or whatever you use for exports) .
