Those are probably just escape sequences that have leaked into the output.
From the man manpage:
To get a plain text version of a man page, without backspaces and
underscores, try
# man foo | col -b > foo.mantxt

So man man was the answer . Thanks! This quick alias function should do the trick:
alias mn='manout'
manout () {
man $1 | col -b > /tmp/$1 && mousepad /tmp/$1 & exit
}
