I'm looking at switching my audio player to use on of those and they seem to be really similar. My main decision will be based on which has better audio quality output. However I'm also interested in any other reasons as to why people choose one over the other.

The quality depends on two things- your source file, and your output device. Note that I did not mention the media player there. I'm fairly certain most audio players will just use libraries to decode, such as libmad, libflac, etc.
It really comes down to having good source files, and making sure you configure your audio output right, and either of these players should give you access to the same things.

So far, development of XMMS2 has focused on making sure things work as they're supposed to, and on ensuring a consistent design of the system. There have been no real optimisations to make things run as fast as possible, but that can probably be achieved before a stable release.
For simplicity & minimalism , Go MPD .

As XMMS2 hasn't been optimized yet, I've been using MPD. htop shows that MPD is using around 1.5% of CPU, while XMMS2 uses up to 40%, and this is a Core 2 Duo.
I hope they start to optimize XMMS2 soon, because I really like the idea of "Collections".

I second the idea of the simplicity of MPD. The last time that I tried XMMS2, it was a hassle to keep libraries up to date, as well it took a huge amount of CPU power to do it. On top of that, there are a lot of MPD users here, so all issues have been covered already or will be as soon as they come up.

well, then sthing must be wrong with your setup. On my computer MPD and XMMS2 are using the same percent 0.5%-1.5% of CPU, It's a core 2 quad, but i prefer xmms2 because it supports mms streams...
