I cannot update my system. When I try I get an error with mono. I've tried with different mirrors and internet connections.

After you change a mirror, do you do pacman -Syy to fully update the repos first? Does it always fail on mono?

Try to clean your cache with pacman -Scc and try again.

Ok, I tried doing -Syy and -Scc, and still get the mono error. When I try to do "pacman -S mono" I get the same error, so I think its just the mono package that is the problem. Should I uninstall it?

Ok, I also cannot remove mono...
sudo pacman -R mono

Use this instead:
#pacman -Rd mono

It does not seem a common problem so I would try changing mirror (/etc/pacman.d/mirrorlist).
Using "-Rd mono" will break everything requiring mono (probably gnome-do in your case).

If I remove mono will I be able to install the updated version? I've tried changing the mirrors and that didn't help. Any idea what is causing this?

It really sounds like the package on the mirror is corrupt. This happened to me quite a while back. It wasn't important at the time so I just ignored the package until it got updated again.

Now that sand_man mentions it, something like this happened to me as well. I was able to fix it, though I don't remember exactly how. I might have manually downloaded the package from the mirror, untarred it to give it a quick check, and installed it using pacman -U when I was satisfied that it was okay. Maybe this would be a reasonable next step for you, since you've switched mirrors, synced, and completely cleared your cache. If worst comes to worst, you could even fudge the PKGBUILD to bypass the integrity check, but that really shouldn't be necessary and might mess up your system somehow.
Alternative suggestion: are you sure that the mirror(s) you've switched to are more up-to-date than the original? The Arch Linux Mirror Check will tell you that.

I used rankmirrors to make a new mirrorlist again, checked with the mirror check site and edited the list and then removed mono using pacman -Rd mono. updated my system and then installed mono again. Everything is working now. Thanks for all your help.
