I have an epson stylus photo r300 it was working with turboprint 2 but there is gutenprint that work with it ...
It's my first printer setup on linux, how I do it ???

Is the printer attached to your PC or over an network?
I usually use cups to do so (even over a network), it is very flexible in terms of configuration options and just works.

OK.
Open your preferred browser and type: http://localhost:631
You will see the the CUPS configuration open. There you can add the printer.
There are a good number of tutorials as to how to deal with all available options. I think there is also one in the wiki (type cups on the wiki search ) but if you need further help just ask.

Except for mentioning installing gutenprint, you did not elaborate in any way what you did do.

I installed cups + gutenprint, followed cups wiki, restarted everything, plugged my printer and tried cups web interface as said ...
I cannot add my printer in administration panel, I don't know exactly why ... (need to be root ???)

Yes, you need to be root. Normally, when use the web interface, you should get a popup window asking you for root credentials (last time I set up a printer in CUPS, at least).
I don't know if Apple fscked that up or not... Why do I have the feeling they did?

You go to the localhost:631 and press Administration, then Add Printer. You are then prompted to log in. As B indicated that is the root password.
