A default config file (~/.taskrc) gets automatically created when I run ‘task’ for the first time, but it contains ‘wrong’ paths to the themes included.

I noticed the same thing. When we build packages, we always change the
PREFIX so that it installs in /usr/bin, rather than /usr/local/bin. It
seems, that if we bother to make sure software installs in the right
place, that the rc file should agree with how we chose to install the
software. I would make a bug report if I was still using task, but I
use tofu smile.
