I'm experiencing the same memory problem and i noticed something that hopefully could help gnome-shell developers to pinpoint what's going on: by installing and enabling the gnome-shell-system-monitor-applet-git extension (the one which produces graphs in the top gnome panel, not the one graphing in the bottom portion of the screen while activating the dashboard) memory will grows quickly, up to 1.5Gb in 4/6 hours, while usually it will raise to 240Mb on the same machine without that extension installed.
(gnome-shell 3.2.1 / mutter 3.2.1 / clutter 1.8.2)
Is  this bug report the correct one to report this? Or is there a better place for this to be noticed?

I'm still doomed by this bug, and i found out that trying to record my desktop via CTRL+SHIFT+ALT+R will make the RAM grows until the machine will halt on its knees in about 10 seconds..

@bmanuel - upstream is aware of the issue but to my knowledge it remains unresolved.  Why not try xfce4?  I did as a function of this mem leak and haven't looked back.

Yes, gnome shell sucks.  There is still an open bug report with upstream on this issue.  Just transition to cinnamon or to xfce4 and be done with it.  Gnome as we knew it died when version 3 was unleashed on the world.  Time to move on.
