Alsa/pulse don't set HDMI devices as the default output by default.
aplay -L will show you all devices, where you should see all detected audio devices and your prefered HDMI device will not set as the default output.
If alsa says the default output is "currently PulseAudio Sound Server", you need to tell pulse what to use. Add "load-module module-alsa-sink device=hw:X,Y" to /etc/pulse/default.pa . X is the card number and Y the device number of the output you want, as provided by aplay -l. You can use aplay -D hw:X,Y test.wav to find out which of the listed HDMI "devices" (there's usually multiple) is the one you want. Make sure your HDMI device isn't muted in alsamixer, than when you restart everything, you should have sound.
Alternitavely, you can edit your asoundrc, but you won't have volume controle.
See alsa's site for more.
