Right now, I have a 5 GB swap partition. But my system only sees 2 GB of swap space - I have 3 gigs of space being used for nothing! Where'd my swap space go?

Unless you have an insanely small amount of memory you should just run a swap partition of around 1GB. It'll do for most stuff.
