Is there some reason why hplip depends on xorg?? I have an old printer attached to my fileserver and its kind of a waste of disk space and arch linux server bandwidth for something I'm not using (xorg).
But maybe this is unavoidable?

Probably because it offers the hp-toolbox, which is a gui printer manager and confiuguration uttility I suppose. I'm staying with hpoj, which I installed via abs using the old PKGBUILD. I found that upgrading to hplip failed to let xsane find my scanner.

hplip "depends" on pyqt, which depends on qt, which depends on xorg. If you don't want to use the hp toolbox utility, you can install hplip without pyqt. IMHO this should be a makedepend instead of a real depend.
