Hi, I can't switch to a2dp on my bluetooth headset anymore, (it defaults to off when I change the profile from pavucontrol or blueman). I hadn't any problems with pulseaudio 2.1. I noticed 3.0 introduced sbc which has to do with bluetooth, so maybe that's the cause of my problem?
Anyway here's the verbose log output of the problem:

I have same issue as you, to workaround that problem I follow these steps (using blueman-manager):
[+] Add device as usual
[+] Connect to headset profile, NOT audio sink
[+] Change HSP/HSF to A2DP
And... it works! Strange and bit confusing.
Also, DO NOT ADD Enable=Socket in you /etc/bluetooth/audio.conf.

I had the problem that a2dp suddenly stopped working and disconnects audio device on activation since weeks.
I have same issue as you, to workaround that problem I follow these steps (using blueman-manager):
[+] Add device as usual
[+] Connect to headset profile, NOT audio sink
[+] Change HSP/HSF to A2DP
And... it works! Strange and bit confusing.Also, DO NOT ADD Enable=Socket in you /etc/bluetooth/audio.conf.

HFP=false
...
[A2DP]
SBCSources=1
MPEG12Sources=0
in the /etc/bluetooth/audio.conf.
I'm very glad it works now, because without a2dp BT sound was very distorted.

Had this problem myself recently on Ubuntu and Arch. After changing the config file to look like that I was still having issues as long as I paired through gnome's bluetooth interface. But when pairing by using bluez-simple-agent it worked and a2dp was the profile selected from the beginning rather than being unable to select anything other than HFP/HSP. The commands I ran were hcitool scan, and then sudo bluez-simple-agent hci0 XX:XX:XX:XX:XX:XX and it paired quickly and was set to a2dp audio profile.
Just in case anyone else runs into the same issue, perhaps this will help.
