I found many text to speech packages but no speech to text ones. I want to simply play a movie into my microphone and have something attempt to make a text transcript from it. My VoIP provider does this when someone leaves me a voice mail, it converts it to text and emails it to me. Surely someone can recommend a linux-native program that can do this? Thank you!

I think that you may have to make something for yourself. You may be able to direct line out to line in on your sound card to use as source, or make a virtual loopback device as source. Or have a mic close to a speaker for something like Julius. Dragon Naturally Speaking appers to run in Wine.
