I've been able to play audio CDs with xine and vlc.
But how do I play audio CDs with mpd and Mplayer? Mplayer only has VCD and DVD options

it's explained in the first few lines of the mplayer man page:
mplayer [cdda|cddb]://track[:speed][/device] [options]
having just tried it myself, it's quite awful. the audio is constantly skipping. the program is ripping the audio and playing it at the same time. my ripping capabilities are quite fast, so i don't know why this is happening. i even disabled the paranoia mode (which should make the rip much faster), but it still skipped.
mpd doesn't play audio cds.
i generally rip all my cds and encode them myself. any modern computer should be able to do this faster than real time, so you should be able to listen to your cds right after you start ripping.
or you could get a program designed specifically for playing cds.

the question is, why would you want to use mplayer for audio cds when there are better apps to use for that purpose, xmms for example? 8)

I have no problem ripping CDs, however sometime it is just more convient to listen off the disc.
I was REALLY hoping mpd had this option. Basically I would like to use only one audio app to manage music if I could help it. I might give xmms a look then

You might also try Beep Media Player (BMP) besides xmms. The look is very similar but xmms is not really developed any more...

that would work, too. i've been using xmms for so long that i always forget about BMP.
but where are all the plugins? can i just copy the ones from xmms?

There are only a few bmp plugins in extra. The rest are in AUR.
