I have connected my Parrot Zik to my computer through a bluetooth dongle. I can do it via bluetoothctl or gnome-settings and it connects correctly. However the headset does not show up in my PulseAudio as a valid output device.
What would be the best steps to debug this? dmesg doesn't seem to show anything useful.

Exactly same problem here. It used to work fine until few weeks ago.

So I did some digging in my pacman logs. The only suspicious thing I installed about the time when the problems started was Skype. So I removed it, restarted, and now my Parrot Ziks work again. Do not ask me why. Bellow is pacman log of all what happened today today. Maybe those lib32-* things that came (and were removed) with Skype were to blame. Maybe some weird coincidence.
