Hello,
I recently switched to gnome from xfce but i don't understand why xfce use so much ram on my computer ,with gnome i had 600/700 mo of memory usage but with xfce i have 900mo/1go usage with just cairo-dock extra(70mo) .
Why?

Post the output of 'free -h'.

you should use something like top or gnome-system-monitor to figure out which processes are eating your ram.

free -h give me:
total utilisé libre partagé tamp/cache disponible
Mem: 7,7G 315M 5,4G 2,5M 2,1G 7,2G
Partition d'échange: 8,8G 0B 8,8G
And i tried with the task manager but i didn't see any process wich use too much memory.

Why did you think that xfce would magically use less ram? (Also use LANG=en_GB.utf8 when posting)

Because xfce is more lightweight than gnome.

It says your system uses 315 M. Also, you have 8 GB of RAM, so e.g. an extra 100 M shouldn't be a problem.
