The announcement of Rust 1.0.0 Beta is almost 3 weeks old: http://blog.rust-lang.org/2015/04/03/Rust-1.0-beta.html But the community package of rust is still on 1.0.0-alpha.
The maintainer has since released other packages. Is there any reason for holding back Rust? Usually, Arch packages are updated quite quickly after an upstream release.

For now you can use the ones from the AUR.

I couldn't find anything on the bugtracker holding the package back, but my guess is that the maintainer didn't get to it just yet or has a good reason to hold it back. If you really want the latest version, use the AUR or update the pkgbuild yourself.
The package has been flagged out of date, so sooner or later the maintainer will update the package.
