Everything I've tried produces no sound. In Windows and Ubuntu, HDMI sound works just fine. Any ideas?

If you are using alsa for sound, try installing the alsa-utils package and run alsamixer.
In alsamixer, make sure that the HDMI sound is selected, and check that it is not muted.

It doesn't work through alsa or pulseaudio. Tested with GNOME's sound settings, speaker-test, and aplay while specifying the device.

please post output of lspci -k , pactl list sinks and pacmdlist .
Those 3 will give us an idea what cards are present in your sytem and what pulseaudio thinks you have.
The pulseaudio troubleshooting page in the wiki might also be helpful, check it.

As I've been Googling, it seems that it could be a kernel regression. One big difference with Ubuntu (14.04) is that it's using the 3.16 kernel.

Just installed the LTS kernel (3.14) and, lo and behold, there's now sound. I guess I need to file a bug report, huh?

Ok, pactl & pacmd don't seem to have any errors, so a kernel issue seems likely now.
I do think a bug report is correct way to go now, but you might want to try different kernel versions to figure out see when the problem started ?

It's probably the default but have you tried booting with radeon.audio=1?
