I have updated pulseaudio to 7.0, now pavucontrol does not want to connect to the pulseaudio server anymore (the usual "Establishing connection to PulseAudio. Please wait...").
There is no helpful log output in either the console when starting pavucontrol or the journal concerning pulseaudio.
When playing back sound (youtube in my example), it does work and my headphones act accordingly, but pavucontrol does not notice the pulseaudio process as it seems.
Any ideas are greatly appreciated

Logout and logback in? Works for getting pulseaudio-ctl to work.

Note that v1.61 does in fact work with PA7.0 which was recently pushed to [extra] but it requires you to log out and log back in not due to a problem with this package, but with the pacmd timing out upon updating from 6.0 to 7.0. Thank you, drive through!

I tried that several times already, doesn't change anything.
Also, my pavucontrol package version is 3.0, not 1.61.

Hmm... pavucontrol works for me and pavucontrol != pulseaudio-ctl
Are you sure all instances of PA stopped? Try a reboot to be sure...

Aight, rebooted. Same result, there's still no change

Ok, I noticed it does not matter whether pulseaudio is running or not. Sounds still works. Must go through alsa?
Anyways. I'm killing pulseaudio and starting an audio stream - then pavucontrol shows up as usual.
The issue: There's only my external speakers, my headphones are gone o.0 I'm very confused.
EDIT: well, I removed all config files, reinstalled pulseaudio and rebooted. Now everything is back to normal. I'm sorry I don't know what that was about, but I'll mark this as solved. Thanks for the help!

A reboot worked for me.

I was having the same problem which I solved by starting pulseaudio with 'pulseaudio --start' instead of 'start-pulseaudio-x11'
