Since the upgrade to GNOME 3.18 (and so glib/gtk+ are also upgraded) LibreOffice cant create PDFs

No problem here, with LibreOffice 5.0.2-2 and KDE/Plasma 5.
Shouldn't matter in which DE it's running, the functionality is the same.
Did you try switching to another entry in /etc/profile.d/libreoffice-fresh.sh?

I changed to gen, now it works just fine (beside looking ugly as hell). Using gtk instead of gtk3 also works. Using gtk3 causes the crash.

+1. Really frustrating.
Using
SAL_USE_VCLPLUGIN=gtk libreoffice --calc
works also.

Libreoffice is crashing when I try to save after 3.18 update. How did you work around that and use gtk vs gtk3

Nothing I changed the SAL_USE_VCLPLUGIN variable to fixed the problem for me. I tried all the suggestions here, in the similar threads, and in the wiki. Changing from libreoffice-fresh to libreoffice-still was the only solution that worked for me.

Further to my post just above, I just read a suggestion on reddit that worked. I restored libreoffice-fresh and then Tools->Options->LibreOffice->General and check "Use LibreOffice dialogs" fixes (well, works around) the problem for me.

Using the Libreoffice dialogs is a valid workaround for me as well. It does appear there is an issue with the GTk3 dialogs in 3.18.
