I decided to enable testing to give Gnome 3.20 a try, and everything seems good except for the extensions. At first, I couldn't enable the extensions installed by gnome-shell-extensions. Using dconf I changed 'disable-extension-version-validation' to true, and that allowed me to enable the extensions. However, when I look at the Details app, I correctly see Gnome 3.20.
The other problem I'm encountering is that the extensions.gnome.org does not recognize my system anymore. I'm thinking this is related to ^, maybe the version key is missing somewhere in dconf?

I'm on testing too, but I can't reproduce your problems. Everything works well here. Have you tried to reset your settings (after backup)?

Weird. If I create a new user, the provided extensions work just fine, although I still can't manage my extensions through Firefox.
However, if I backup and reset `.config/dconf/user` in my normal user, the problems persist.

did you try reseting ~/.local/share/gnome-shell/extensions/ ?
That's where per-user extensions are installed, and I think they are preferred over system-wide extensions.

huh, that's strange. I didn't expect that to make a difference, but sure enough that did it. I wonder what was throwing it off.
I just manually reinstalled the extensions I had before and I'm good now I can still use the web interface using Epiphany so I'm not going to worry about FF
