After installation Gnome 3.20 in my system there are packages xorg-server and wayland.
I install weston and xorg-server-xwayland.
I use xf86-video-amdgpu and mesa.
GDM use as display manager.
When I login, I see the xorg process and any wayland process.
In GDM, there is no possibility to choose the type of session (xorg or wayland).
It is not very crucial, but how can I activate wayland session?

You don't need the weston package to run gnome on wayland. You can use it to test wayland from an X session though; just execute `weston`. That way you can see if wayland is working at all or not.
Other than that, as far as I'm aware it should work with AMD cards as long as you're not using the Catalyst drivers (and assuming your system is up-to-date).

PS. Whether you have xf86-video-amdgpu or not will be irrelevant in wayland. It's only used for xorg.
PSPS. Iirc there is a lot of new AMD stuff in kernel 4.7.

I starting wayland from an X session. It's ok.
I don't use fglrx drivers.
xf86-video-amdgpu i install for xorg server.
My video card: HD 7870 (GCN 1.0).
How can I activate wayland session?

On the GDM login screen there is a small cogwheel icon below where you type in your password. Click on that and select the wayland session.
