I've tried installing NeverWinter Nights 2 with PlayonLinux and I get the following error everytime I try to start it.

I assume it's something that has to do with the ALSA sound drivers but I'm not sure how to fix this.

This is a strange problem with how PlayonLinux sets it's environment variables which will lead to the ALSA pulse module breaking. There are workarounds, you could create your own launcher script that points to the correct POL version, see this thread and post for an example. That said, why don't you try with vanilla wine? It contains many patches, and native pulseaudio support. PoL's scripts are often quite outdated. NW2's WineHQ entry leads me to believe this should be relatively smooth (although the last test result has also been with quite an old version so maybe this wouldn't be such a clean solution)

A dependency, which in my experience, wasn't always installed is Dxdiag. So you could also try installing that in the prefix.

FWIW: I had it set to Wine 1.3.32 (which presumably worked back when) and checking today it crashes out.
1.9.5-staging - fires up fine.

I had that installed but it still wasn't working, waiting on the wine version to finish installing now.

Okay I installed using wine and it seems to be working now, though the intro graphics are pixelated for some reason. Maybe something is missing?
