How to set up a lan game infrastructure ?

I have three old PCs (1 and 2 core CPUs, 2 - 4 Gbyte Ram),
each one has a NIC and arch linux installed, all are connected to the same router.

main question: What are the general steps in building a local LAN for gaming?
------------------------------------------------------------------------------------------------------
minor questions:
     what protocoll(s) are necessary ?,
     is the setup for each game individual or universal?
     can I join a windows PC into the all-arch-linux setup without any modifications?
