Can you change the GTK+ colours etc. in Xdefaults? There are some screenies out there of GTK+ apps that I use, but they look far more shiny. I assume that's down to the WM, but I wondered if there was anything manual I could do to improve things, other than make my own icon set.

You can change GTK+ themes... Check out gtk-chtheme, for example, it's an application to do just that.
