Hello,
I notice that gtk applications ( thunderbird, gimp ) crash since the update of gdk-pixbuf2 package ( version 2.36.1+9+gb1fbea9-1 ),
the crash occurs when I try to click on the bar menu of gtk applications ( thunderbird, gimp ),
I use plasma 5 as desktop environment
downgrading gdk-pixbuf2 to 2.36.0+2+ga7c869a-3 is a workaround

No problems using gimp here with gdk-pixbuf2 2.36.1+9+gb1fbea9-1 installed.
Can you run gimp from a terminal and check what the output the crash generates? Which GTK2 theme are you using?

I don't use gnome, I use plasma 5 ( KDE ), for the gtk2 theme : Qtcurve
output in console during the crash :
(gimp:9515): GLib-ERROR **: gmem.c:328: overflow allocating 18446744073709551615*18446744073709551615 bytes
I am not alone with this bug, other people have also this bug :

you can try to click on every menu item on the bar menu, one of them should crash the application if gdk-pixbuf2-2.36.1+9+gb1fbea9-1 version is installed,
if you don't have this bug then your gnome theme manages to avoid this bug, the boggy function in gdk-pixbuf2 is probably not called with your gnome theme

I am also on plasma, but I am using the breeze gtk theme.
I didn't check every single menu item, but none of the top tier items (File, Edit, Select, etc.) cause crashes for me, and none of the submenu items I tested caused crashes either. Are there any menu items in particular that consistently cause this behaviour for you, or is it random?
Could you try switching to the breeze-gtk theme temporarily and seeing if you still get the crashes?

for example if I click on the menu "view" in gimp I get the crash,
if I change gtk-theme to breeze instead of Qtcurve I don't have the crash

There is a new version in the repos: 2.36.1+27+g5dcc1b8da-1
But I wouldn't know if it has a fix, since I couldn't get Thunderbird to crash either way. I use Cinnamon.

Even gdk-pixbuf2 2.36.1+31+gecea71eb6-1, which is flagged out-of-date, crashes on creating thumbnails for pcmanfm-qt (through libfm). I compiled and installed the latest version today but the problem persisted. Downgrading to gdk-pixbuf2-2.36.0+2+ga7c869a-3 was the only way to get rid of those crashes.
EDIT: The latest version is gdk-pixbuf2-2.36.2 now.
EDIT2: The problem was in the new binary "gdk-pixbuf-thumbnailer". I removed the file '/usr/share/thumbnailers/gdk-pixbuf-thumbnailer.thumbnailer' and the problem was fixed with v2.36.2.
EDIT3: It was a libfm bug
