Hi:
for the moment is not a big problem, but i wanna run certain programs like "alacarte" and other things like "netgo" as normal user (or use a graphical login (example: gtkpacman); now i'm using the console for login and exec.

You meen you want a login manager like gdm ? if so
pacman -S gdm
add gdm to your DAEMONS in /etc/rc.conf and reboot (or /etc/rc.d/gdm start to immediatly use it)
if it isn't please explain more

Yes, change the menu shortcuts to read 'gksu [application_name]' just as you have done above.
You must actually install gksu before this will work though!
pacman -S gksu
