Hi there, first post here, so go easy on me if you're willing to.
How could I switch from speakers on my laptop, to HDMI output? I like to watch some things on my TV, and this would make it easier.
I know how to do it manually, but is there any package that would let me switch with a click of a button? The settings manager for KDE is close, but could I configure a button combonation to swap between HDMI to speakers for an open application? Such as firefox, MPV, etc.

No idea, but scripting the actions needed for the switch and assigning them to shortcuts seems easiest way to achieve this.
Disliking systemd intensely, but not satisfied with alternatives so focusing on taming systemd.
clean chroot building not flexible enough ?

Just to verify, you are aware that if you use plasma-pa you can, while having the corresponding tray menu in the systray open, go the the applications tab and start to drag $application to switch between devices? You mention the settings manager, which I understand to be you going systemsettings -> multimedia -> and move the priority there. Which indeed is a bit cumbersome.
If you really want to make it faster and on button press, I agree that writing a script and assigning it a combination is likely the most straight forward way. There's an example to cycle all open applications to the next available sink on the Pulse FAQ page which might serve well as a starting point
