I have a Mac Mini running a fresh install of Arch Linux. Connected to it are two Apple 27" Thunderbolt monitors. I have confirmed that both monitors are functional using macOS as well as switching the ports under Arch Linux, however, I am unable to get both monitors to turn on in Arch.
I followed the directions for installing and configuring the Intel graphics driver and configuring a multi-head system from the wiki but to no avail.

and configuring a multi-head system from the wiki
What in particular? If you should not configure any "multi-head" for this to work and chances are good you added additional pitfalls by this.
Offline
All I really did from the Multihead page was create the /etc/X11/xorg.conf.d/10-monitor.conf file:
Section "Monitor"
Identifier "DP1"
Option "Primary" "true"
EndSection
Section "Monitor"
Identifier "DP2"
Option "RightOf" "DP1"
EndSection

Is xf86-video-intel installed ?
Disliking systemd intensely, but not satisfied with alternatives so focusing on taming systemd.
(A works at time B) && (time C > time B ) ≠ (A works at time C)
Offline
Yes, I have xf86-video-intel installed and I have i915 added to the modules array in /etc/mkinitcpio.conf for early KMS.
Offline
Your first monitor is on DisplayPort1 (DP1). Where is your 2nd monitor connected to? Should be DP2.
Please post ~/.local/share/xorg/Xorg.0.log.
Try uninstalling 'xf86-video-intel' (i guess you can leave early KMS in mkinitcpio.conf - not sure though). This will fall back to 'modesetting' driver.
Remove any custom config. Let the driver deal with hardware detection first. Watch Xorg.0.log for detected hardware.
