Hello in the Wiki you can find detailed and neutral description about Xorg and Wayland. Under Gnome it is written that Wayland is default know. But I still have in my mind that it is buggy and not a daily driver yet.
In short: I am unsure whether I should pick xorg or Wayland and what driver to pick for an 1080 Nvidea card.
Maybe somebody can give me a hint about a proper selection.

Hmm but can I install both of them in parallel and get rid of the unwanted one cleanly later on? I don't want to end up with an messed up system diractly from beginning.

There's nothing to actively get "rid" of from your side either way. The relevant components are for the time being hard dependencies, and you can simply switch on the login screen / during session startup, whether you want to use Wayland or Xorg. Both are going to be installed one way or the other, by virtue of dependencies.
And FWIW at least to my knowledge, the perf issues for Wayland on nvidia are still present and if you intend to play games you might have to rely on xwayland integration, which has only become feasible with xorg 1.20 (curremtly in testing) on the prop drivers in any case.
