gnome app specific keyboard shortcuts

Im a bit confused atm

Im not that long using gnome. In System->Settings->Menus and Toolbars i can activate to change shortcuts.
So i open listen (my audio player) for example open the file menu and can then select an entry with mouse and change shortcut by pressing the keys.
It works and is s.th. ive found pretty useful Even more useful and this is the point of this topic now, would be if those apps would save this keyboard shortcuts. Everytime i reopen them, every set shortcuts are back to normal :?

Is this 'normal' behavoour of gnome (or gtk?) ?
