After the last update, something must have gone wrong because the "encrypt" kernel module was removed from my configs. I know this shouldn't happen, but it did.
In order to fix it, I had to boot into an installation disk, mount the drives, and rebuild the kernel modules to include "encrypt".
Thought I would post this here in case anyone else runs into this.
