I recently installed pdfsam with OpenJDK 8 and OpenJFX. When I try to run pdfsam it flashes the pdfsam splash logo and disappears. From the stacktrace, it looks like some of the toolkits form javafx are being found, but I am not familiar enough with java to troubleshoot it.
I only have one java environment (openjdk 8) and I checked that it is currently set.

java-8-openjdk (default)Here is the stacktrace.

Google the error you got: "Error initializing QuantumRenderer: no suitable pipeline found". One of the first results returned is a StackOverflow post that appears to have several pointers to investigate, such as GTK 2 vs 3 and their respective libraries and/or adding "-Dprism.verbose=true" to get more details for troubleshooting.

I think I saw the StackOverflow post you did but missed the section about installing GTK2. The "-Dprism.verbose=true" didn't provide any additional info for me.
The solution for me was to install gtk2.
