Text mode aspect ratio

I noticed that when I run Arch Linux live from an ISO in a VM it assumes a 4:3 aspect ratio when in text mode, but when I run Arch on the bare metal from a physical live CD it assumes a 16:9 aspect ratio.  I'm wondering why it does this, and also, is there any way to change the aspect ratio in text mode to something other than the default?
