I really like the gnome desktop so switching to arch I installed gnome. However there are some Apps that I am not using like the internet browser or totem etc. I know that I can deselect them on install of gnome or remove them later. But what I don't know is, which packages are deeply integrated in which are not. EG with totem I am quite sure I can remove it without any troubles, but with gnome-documents or gnome-calendar I am not that sure. Is there any way to sort that out instead of try and error?

As noted in the wiki, you can simply install gnome-shell if that's all you want. As for removing, this is precisely why packagers do what they do: packages list dependencies. Anything that you do not use that is not a dependency of something else you use can be removed.
If the removal of package A would break package B, then package A will be listed as a dependency of package B and pacman will not let you remove A while B is also installed. This is exactly what you have seen in your other thread (in, admittedly, a situation where some of the packaging information may need to be touched up).
