I am changing from email addresses under the domain of my internet provider to adresses under a personal domain .
Several of my aur packages are vcs pacakges and those change pkgver/pkgrel almost every build - an additional change for emailadress is no problem .
For the stable packages I do maintain it's different though.
Should I increase pkgrel when updating the maintainer email address in the PKGBUILD ?

I wouldn't as it is not a change in any of the software, or in the build script itself.

Don't bump the pkgrel for this. It doesn't affect the build in any way, the resulting package is the same.
In fact, if it were not for the fact that the built package contains a checksum of the PKGBUILD file used to build it, the resulting package would even be byte-identical... but as it is, this has the same effect as adding a single whitespace character to the end of a line -- something that also changes the hash of the file, but cannot otherwise be differentiated between.
It's a bash file comment.

I build the vcs pacakges before uploading to check for errors, so they'll have newer pkgver .
The stable pacakges will stay same pkver and pkgrel.
