I am using arch with all updates
today I tried to play a video with MPV and tried SHIFT+T to toggle Always on Top but sadly it never work
It display an OSD responding to my order but the window wont stay on top
using gnome 3
I dont know where to look!

You'll be using gnome on wayland (check your session status) and because of https://wiki.archlinux.org/index.php/Mp … and_output this feature will most likely not work even if it should be implemented for wayland in mpv and supported by mutter unless you make mpv use the wayland output.
If you log into a gnome on Xorg session, It'll likely "just work™"

I have found a workaround
press ALT+TAB then select "ALWAYS ON TOP"

So, apparently there is no standard in Wayland yet to enable "Always on top". The relevant issue for MPV is this one: https://github.com/mpv-player/mpv/issues/3832
As for @dr3mro's comment, he made a typo or the default shortcut got changed since then, the keyboard shortcut is "ALT + Space" then select "Always on top"
