I'll respond only in part:
5.) MythTV - It's the best PVR in linux I've ever tried....Well it's the only one I've ever tried but no need to look any further. Some would say it's a bear to install and configure properly. I'd say it's worth the effort.
6. c) Transcode - Not noob friendly but it's my favorite.
Avidemux - I use it for cropping some letterboxed shows recorded with MythTV.
Tovid - I don't use it but good starting place.
Text editor - I just found Geany thanks to a couple of different recent posts here. It's exactly what I was looking for.
2.) I use Gnome for my desktop. I used to use other WM's instead but I got tired of fiddling with them. I just removed all the icons from the Gnome desktop and removed one of the panels. Then I pretend it's a lightweight desktop.

Maintenance
I just use vim to edit text files.
Speed Boost
None, default is fine. (Though I'm thinking of compiling a custom kernel so I don't need to use a ramdisk.
Desktop
Ion -- A lightweight, extensible, tiling window manager.
Internet
Snownews for RSS feeds.
Getmail/Mutt/msmtp for email (including mailing lists) and newsserver (well, I plan to implement this).
Irssi + Bitlbee for IRC and MSN.
Firefox for browsing.
wget for downloading files (though I usually use Firefox for downloading).
rtorrent is my torrent client, it's great.
4
Screen to manage multiple console-based apps.
Vim-latex -- A cool plugin for Vim to help when writing in LaTeX.
hnb -- A really useful hierarchical notepad which I use for a todo-list, contact list, quotes, random lists, etc. (I'm thinking of trying to implement a RSS reader in this... though that may over-complicating a simple application.
pwsafe -- Console-based application to manage most of my passwords.
Multimedia
I just organise my files well in directories (though admittadly, I prefer tagging to directories. Maybe I should start using tagutils).
Music -> mpd + ncmpc
Videos -> mplayer
PDFs -> acroread (epdfview and xpdf were both inadequate)
Image viewing -> feh
Multimedia II
I never have any need to edit images/vidoes/audio...
S/w you cant live without -- All of the above
Also, xlock, tor+privoxy (for anonymous browsing), htop and netstat for monitoring my system and cdrtools for burning CDs.

3b) If you need a messenger, Mercury is quite customizable and in addition supports stuff like nudges, winks, MSN games, and webcam send/recieve
Transmission-gtk is nice for torrents, however it doesn't have a lot of features...
5c) Gthumb or gqview, depending on if you have gnome libs installed
2e) You might want to check out the windowmanagers Compiz (requires XGL) or Enlightenment DR17
XSnow makes santa and lots of snow appear on the desktop (below apps)
XPenguins (I think) makes penguins walk around on the desktop and take suicide among other things if I remember correctly

.Thanks for mentioning this. I'm gonna check it out.
Me too, it really sounds nice. I just somehow don't like the fact that it's latest regular release was 3 years ago. Well, maybe it's nearly perfect for what it does... ;-)

1 System
a. Vim for file editing, and MC (Midnight Commandor) to make getting around the filesystem easier/lazier. "Unison" is good for keeping multiple machines (or parts of) in sync across a network. I use it to keep my home directories and my high score boards in sync on both machines.
b and c. There is a program out there called "readahead", don't know if there is an Arch package for it (I use it on my Gentoo box). Basically, on startup it caches files you give it in a list. This speeds up boot and run time. For developing/AUR, "ccache" is a godsend.
2 Desktop
I use KDE (the full group, I'm too lazy to pick out the bits I want), along with yakuake (for a nice easy access terminal) and katapult (for fast program finding). I use gkrellm2 for system monitoring.
3 Internet
I use Kontact (may as well, given I use KDE). It gives me mail, calendar, address book, notes (which can be stuck onto the desktop), RSS, that kinda thing.
Firefox and links for web browsing, aMSN for IM duties, Skype for cheap phone calls.
4 Productivity
Frozen Bubble of course
OpenOffice for report writing, spreadsheeting, finances, that kinda thing. KDevelop and Vim for software development.
Octave, Mathematica (sadly, costs money) and TeXmacs for mathsy stuff.
5 Multimedia I
b. Amarok
c. Gwenview or gimv.
d. gimv
6 Multimedia II
a. Gimp
c. avidemux2 and mencoder.
