Hi all,
Every now and again (I think after an update but not 100% sure), startx fails to run due to no device found and I can't connect to any networks due to my wifi card not working. I can fix it by running pacstrap base linux linux-firmware from a live usb, but obviously that't not ideal
Does anyone know what might be going on?

You forget to mount the /boot partition before the update or have it mounted but actually boot the root partition.
Compare "uname -a" and "pacman -Qs linux" when this happens. They'll likely fall apart.

Yup - pretty sure that was it! I've updated my fstab and everything seems to be working now. Thanks so much!
