It' very annoing. I use xfce and from the last update I have this issue ... probably some icons name
related to desktop manager have changed.
This is true for DE apps like thunar, xfce terminal, settings, etc ... if you create a launcher in the dock by drag-and-drop,
the icons is missing and you have only a question marks

Then download and install them, I checked them and in cairo-dock all icons in this thunar are correctly displayed. You write that this has nothing to do with the icon theme, it has because the new Xfce4 icons are placed only in hicolor and not in Adwaita anymore.

I can confirm the git package build from aur doens't have the same issue. All the icons looks good.
So the source code have already been fixed.

Don't do that. Upstream' homepage names 3.4.0 as stable, so 3.4.1 in the repos is, strictly seen, too new rather than too old. It is upstream version policy which is to blame here.
