I have not idea what's causing this. But when I run grub-mkconfig I get an error saying that it can't find a GRUB disk for the flash drive I'm installing Arch Linux on.

Please post the full output of grub-mkconfig, the contents of /boot/grub/grub.cfg and /etc/default/grub if you edited it, also the output of parted -l.

I'm using the linux-zen kernel, and am dual booting with Windows on the same drive

The same error happened when I installed Manjaro, before I installed Arch
(mount: /new_root can't find UUID for root partion)
