All packages in current. Then you select only the few packages that you need from Extra. All packages in Current and Extra are considered to work and be free from spyware etc. If you want safe as in "a stable server", then I'd install packages from current, then your network drivers and the server from Extra (if it's avaliable).

No packages in the archlinux repositories contains any spyware, trojans or rootkits.

However if you have the need to be exploit free, it might be wise to choose the security enhanced kernel, install a firewall, and minimize the amount of unecessary packages. In general, if you are behind a router, and have set up iptables/firewall you will be safe from all those above. Linux as an operating system is very secure compared to i.e. Windows.
So just install archlinux like normal, then install a firewall, and you will be fine.
