Expanded GRUB menu on boot

I just switched from Ubuntu to arch. I have arch linux on zfs.

The grub Boot menu has only one choice. Boot the latest kernel.
Is there a way to make a menu that includes several prior version of the kernel and lts kernel.
Also is there a way to boot to a prior snapshot as in Ubuntu.

Arch kernels aren't versioned: you get the latest. You can include other kernels in your menu, read the grub wiki page.

The zfs wiki page also describes your options for snapshots.

Specifically it is mentioning Bieaz and rocbe-pac.  Neither is well documented. I tries installing and I was not able to boot.
