[SOLVED] Issues mounting root partition for installation

Hi, I'm a bit new to Arch Linux. I've installed it on a VM before without any issues, but now I want to use it as my daily driver.

I have an old Chromebook that I've converted to run Pop!_OS, which it ran flawlessly(ish).

Anyways, I started following the wiki's install guide and everything went well up until I needed to mount the root filesystem...

# mount /dev/mmcblk0p3 /mnt

I'm able to mount the EFI partition anywhere, but just not the root partition.

* A UUID is here, I just don't want to copy it over... ya know.
** It's mounted here because I was reading this and I thought I had to copy stuff onto there, which I don't.

EDIT:
For kicks and giggles, I decided to try Ubuntu Server (Since it was the only ISO I had that would fit on my flash drive) and that ended up in a Kernel Panic! I Re-flashed the same Arch ISO and whaddya know it's another kernel panic! This time, Arch was complaining about SquashFS not being able to read a different block. I'll try another flash drive if I can find one... I've had issues with this particular POS flash drive before...

EDIT 2:
Found one! This time because I'm just not in the mood to deal with... things, so I used archinstall. I'm now running Arch Linux on my Chromebook!
